Crispy Morbier salad

  • 400g Morbier
  • 200g smoked lardons
  • Mixture of green salad leaves
  • 16 cherry tomatoes
  • 4 eggs
  • 4 handfuls of salted popcorn
  • Wine vinegar
  • Freshly ground black pepper
  • Your vinaigrette of choice

Step 1

Wash and dry the salad leaves.
Divide them between 4 individual bowls.
Slice the Morbier finely and place it on the salad leaves.

Step 2

Poach the eggs for 3 minutes in boiling water.
The yolk should still be runny.

Step 3

In a hot frying pan, brown the smoked lardons.
Deglaze the pan with a little wine vinegar.

Step 4

Place the lardons and poached eggs on the salad and Morbier. Drizzle with the deglazed sauce.
Add some cherry tomatoes to each bowl.
Season lightly with pepper.
Sprinkle over the popcorn before serving.
