Main Course

Morbiflette, the Jura Tartiflette

  • 1kg potatoes
  • 450g Morbier
  • 200g smoked lardons
  • 2 large onions
  • 300ml pouring cream
  • 100ml white wine
  • Salt or fine salt
  • Pepper

Step 1

Preheat the oven to 200°C.

Step 2

Peel the potatoes and cut into slices.
Cook them in boiling water for 5 minutes.

Step 3

Peel the onions and fry with the lardons in a frying pan.
When the onions and lardons begin to colour, add the white wine and simmer for 2 to 3 minutes.

Step 4

Cover the base of a gratin dish with slices of potato.
Season and add the onions and lardons.
Finish with the rest of the potatoes. Season again.
Pour the cream over the potatoes.

Step 5

Cut slices of Morbier and place them on top of the potatoes.
Cook for about 35 minutes.
