Gaufres au Morbier & à la saucisse de Morteau

Ingredients

  • 170g Morbier
  • 110g flour
  • 90g Gaude de Bourgogne flour
  • 25g cornflour
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 2 eggs
  • 60ml rapeseed oil
  • 375ml milk mixed with 2 tbsp vinegar
  • 1 Morteau sausage
  • Rocket salad
  • Salt

Step 1

Beat the eggs and mix them with the rapeseed oil.

Step 2

In a big bowl, mix the flour, cornflour, salt and bicarbonate of soda.
Add the eggs to the dry ingredients.
Add the milk gradually and mix to form a batter.

Step 3

Cut the Morbier into small cubes.
Cut the Morteau sausage into small cubes.
Add the Morbier and sausage to the batter.
Leave to rest in the fridge for 15 minutes.

Step 4

Cook the waffles in a waffle maker.
To serve, place some thin slices of Morbier and Morteau sausage on top of the waffles.
You can serve it with some rocket leaves.
